Collard Greens

1 tbsp coconut or safflower oil
1 bunch of greens
½ cup slice onions
2 garlic cloves minced
½ cup water
2 tsp red wine vinegar
Dash of sea salt and pepper

  1. In large skillet heat oil over medium high and sauté onions and garlic for a minute or so. Add collard greens and ½ cup of water, salt and pepper. Cover with lid and simmer for about 30 minute until collards are tender. Uncover and add vinegar. Bring to boil for a few minutes until moisture is mostly evaporated.
