Curried Broccoli and Cauliflower Soup

2 tbsp coconut oil

1 onion diced

2 garlic cloves minced

1 lb broccoli

1 lb cauliflower

1 ½ tsp curry powder

5 cups vegetable broth

1 cup coconut milk (can be low-fat)

Couple of dashes of nutmeg

Dash of cayenne

Sea salt to taste (TASTE FIRST)

1 tsp white pepper


  1.  In large pot, melt coconut oil over medium high heat.  Add onion and sauté for a few minutes and then add garlic.  Saute until onions are translucent and soft.
  2. Add broccoli and cauliflower, curry powder and ¼ cup of vegetable broth.  Cover and steam for about 5 minutes.  Add balance of broth and simmer until cauliflower is very tender.
  3. Puree soup with immersion blender or in processor.  Re-heat in pot with coconut milk and spices.


Garnish with chopped scallions or for your vegetarian friends – a dollop of sour cream or grated asiago – Amazing!


The perfect start to any meal and a great way to sneak in more vegetables!  No one will ever know they’ve just been served broccoli – they will only know it’s delicious!
