Steak & Mashed Potatoes – Or Not!

Serves 4-6

Step 1: Marinate Mushrooms

4 large Portobello mushrooms (wiped clean and stem removed)
2 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
½ tsp garlic powder (optional)
Dash of sea salt and cracked pepper

Whisk oil, vinegar and seasonings together. In baking dish, place mushroom gill side up and drizzle with oil and vinegar marinade. Allow to set in refrigerator covered for at least 30 minutes.

Step 2 Ingredients: Garlic Mash Potatoes – Or Not!

1 large head of cauliflower cut into florets
2-3 garlic cloves (crushed a peeled)
1 cup vegetable broth (Better than Bouillon)
1/3 cup of SoCo coconut milk (unsweetened)
2 tbsp nutritional yeast flakes (optional)*
3 tsp extra virgin olive oil (cold pressed)
Cracked pepper to taste

Step 2: Preparation

  1. Place cauliflower florets and garlic in steamer basket. Add stock to pan and steam for about 20 minutes or until cauliflower is very tender. Drain off broth and reserve.
  2. Place cauliflower and garlic in food processor and pulse a few times. Add milk, nutritional yeast, and olive oil. Process until smooth and creamy, adding a little reserved broth as needed. You can also use a hand mixer.
  3. Top with fresh chives and a little cracked pepper.

Nutritional yeast has a rich buttery flavor and is a great, healthy alternative to butter and cheese. It’s also good source of vitamin B-12 and high in protein. It can be found at any whole foods store (in bulk or packaged).
